the greatest gazpacho

benefits: Tomatoes are high in vitamin value, they are a wonderful blood cleanser, and excellent in elimination diets. They are a good source of vitamin C and potassium; they also supply folic acid and vitamin A. Walnuts are an excellent source of copper and magnesium, and a good source of potassium, vitamin B6, folic acid, and thiamine. A source of fiber, they also contain pantothenic acid. Pine Nuts are a source of dietary fiber and an excellent source of magnesium, potassium, phosphorus, iron, zinc, copper, and niacin; they are a good source of folic acid and provide riboflavin as well as vitamin B6.

mixed bean and vegetable soup

benefits: Beans are an excellent source of potassium and folic acid, a good source of magnesium and iron, and contain copper, phosphorus, zinc, thiamine, niacin and vitamin B6. They are high in protein and fibre and are said to be a diuretic and tonic, and cleanse the blood and protect against infection. Fennel is an excellent source of potassium; it contains vitamin C, folic acid, magnesium, calcium and phosphorus. It is thought to have the properties of a diuretic, an antispasmodic, and a stimulant. It is also said to soothe gastric pain, to aid the digestion of fatty or indigestible foods, to stimulate the appetite, to cleanse the system, and to prevent flatulence.

twisted tabouli salad

benefits: Kale is great for building up the calcium content of the body and builds strong teeth, as well as being beneficial to the digestive and nervous systems. It is an excellent source of vitamins A and C and potassium; it is a good source of vitamin B6 and copper, and provides folic acid, calcium, iron, thiamine, riboflavin, niacin, and zinc. Parsley is a diuretic and stimulant; it combats scurvy and intestinal problems, stimulates the appetite, aids digestion, and freshens the breath

enjoying: COOK NOODLES: 1. In a pot bring 4 cups of water to a boil. 2. Add 1 cup of noodles and cook, uncovered, stirring occasionally about 7-10 minutes until al dente. 3. Rinse with cold water and drain well. REHEAT SAUCE: reheat gently in a pot on the stove over medium heat until warm and place over cooked noodles.

toasted buckwheat pilaf with dried fruit

benefits: Kasha is roasted cracked or whole buckwheat with a distinct flavour. Cooked and roasted buckwheat grains are a good source of magnesium; they also contain potassium, copper, zinc, phosphorus, folic acid, iron, and pantothenic acid. The profile of essential amino acids in buckwheat reveals a high level of lysine, with methionine being the limiting factor. It is easily digested, energizing and nutritious.

macaroni and no cheese

benefits: This is an awesome vegan version of mac an d cheese using nutritional yeast to make it creamy. Nutritional Yeast is a terrific food, providing nutrition, enhancing flavor, and adding taste to your favorite meals and drinks. It is an excellent source of protein (52%), containing essential amino acids. Rich in vitamins, especially the B-complex vitamins. It is an excellent source of folic acid, which is important for formation, growth, and reproduction of red blood cells.
